Fourth of July fruit cups

Whip cream for several minutes until it forms whipped cream. Put one dessert cup (I bought the vanilla ones from Whole Foods) on a plate. Add two spoonfuls of ice cream to cover the center. Add the red fruit around the outside of the ice cream. Cover the center with whipped cream and garnish with blueberries.

Monkey Milk

This is a wonderful smoothie that gets my daughter to drink her milk (not a fan) and I love it too. It is very easy and quick.

Four-minute plantain in the microwave

Take a yellow plantain with a few black spots. Wrap it in a paper towel (to prevent it from exploding in your microwave). Microwave for two minutes on one side, then flip and microwave for two minutes on the other side.

Open carefully. Mine have usually split open on one side. Slice and serve. I like to eat mine plain but you can put a little sugar on them to make them sweeter if you want.

Baked Apples and other fruit

Slice the apples into thin pieces (about 12-16 slices per apple). Place in large glass container, coat the top with cinnamon, and stir. I just shake the cinnamon on but it's probably 1/2 t. per apple. Cook in the microwave for about 1.5 minutes per apple. I like to cook them for three minutes and then stir the apples. The bottom ones are likely to be nice and soft while the top ones will be more crunchy. The amount of time needed for cooking depends on how large the bottom of the bowl is, how thick you slice the apples, and how many apples you use. If you want to make a large batch you can also bake them in the oven (350 degrees for about 30 minutes).

Pumpkin bread with dates

  1. Preheat oven to 350°
  2. Grease a 9" x 5" loaf pan
  3. Whisk the sugar, pumpkin, eggs, and oil until smooth (about one minute) in a large bowl.
  4. Combine the flours, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg in a medium size bowl. Add the dry ingredients to the large bowl and mix for one to two minutes.
  5. Fold in the dates using just a few strokes.
  6. Pour batter into loaf pan and bake for 60-70 minutes.
  7. Cool on a rack for 10 minutes.
