Banana Zucchini Bread

Here is a recipe that a very close friend created. She is an excellent cook who loves to create recipes and try them on her two boys (2 and 4). They love this bread! She said the zucchini adds little taste but a lot of moisture. Enjoy!....

3 ripe bananas, well mashed
1 small zucchini (w/ or w/out skin) grated
2 large eggs, well beaten
1/2 cup Canola oil
1 cup White Unbleached Flour
1 cup Whole Wheat Flour
1/2 cup ground Flaxseed or Wheat Germ
3/4 cup sugar
1 tsp salt
1 tsp baking soda
1/2 cup chopped walnuts (optional)

Preheat oven to 350. Grease a loaf pan. Mix the bananas, zucchini, eggs and canola oil in a large bowl. Combine the White Flour, Whole Wheat Flour, Flaxseed, sugar, salt and baking soda in a smaller bowl. Mix well and then stir the dry mixture into the wet mixture making sure not to over mix. Add the walnut if using and blend. Put the batter in the pan and bake for 50 min.- 1 hour depending on the oven. Remove from the pan to a rack. Serve warm and enjoy.

Chefs note: You can also replace the sugar with 1/2 cup of honey or 3/4 cup brown sugar.
