Fourth of July fruit cups

Ingredients

  • Small container of whipping cream
  • Red fruit (I used cut plums but strawberries and raspberries would be great)
  • Blueberries or other blue fruit
  • Dessert cups; slice of pound cake; slice of angel cake, or ice cream cone bowls
  • Vanilla ice cream
Cooking Instructions
Whip cream for several minutes until it forms whipped cream. Put one dessert cup (I bought the vanilla ones from Whole Foods) on a plate. Add two spoonfuls of ice cream to cover the center. Add the red fruit around the outside of the ice cream. Cover the center with whipped cream and garnish with blueberries.

I'm sure I've seen desserts like this before but I didn't follow a recipe.
Notes
This dessert took very little time to make and looked great. It was perfect for our 4th of July celebration and I look forward to making it again soon. It's also easy to alter the presentation for those who don't eat some of the ingredients. I used soy yogurt and soy whipped cream instead of the dairy items. I don't recommend the soy whipped cream - organic maltodextrin and organic hydrogenated palm oil made me miss Cool Whip. Graham crackers and animal crackers also work well for the base.
