Jacques' chunky lentil soup

Ingredients
- 1 1/2 c. lentils (8 ounces)
- 1 medium potato - peeled and diced (about a cup)
- 1 small onion - thinly sliced
- 1 1/2 c. carrot - cut in 1/2" pieces (I use baby carrots)
- 4 c. chicken stock
- 3 c. water
- 3/4 t. salt
- 1/2 t. dried thyme
Cooking Instructions
Wash lentils.
Add all ingredients to a pot and bring to a boil.
Stir, reduce heat, cover and simmer for 50 minutes.

Notes
I love this soup because it's so easy to make. We've made it for friends who are vegetarian by using a veggie stock and they loved it too. There are lots of other recipes in Jacques Pepin's Simple and Healthy Cooking book we like too.
