Orzo, goat cheese, and avocado salad

Ingredients

  • 2 c. orzo (I buy in bulk)
  • 2 avocados - diced
  • 1 pint of grape tomatoes (cherry would also work)
  • 1 T. lemon juice
  • 1 shallot - thinly sliced and then chopped
  • 2 cloves of garlic - minced
  • 6 oz. goat or sheep cheese (I used half feta and half chevre - they were both in the refrigerator)
  • salt and pepper
Cooking Instructions
Cook orzo for 10 minutes (according to recipe). Chop avocado, tomatoes, cheese, shallot, and garlic. Add salt and pepper. Run orzo under cold water. Add orzo and pour lemon juice on top. Mix and serve.

Notes
I think this recipe took about 20 minutes to prepare and our one year-old loved it. Variations - serve on romaine leaves or with chicken.
